Our Cakes and Aesthetics
Sincerely Meraki cakes merge the design style of Western buttercream cakes with the palate of Asian bakery cakes. Our cakes sit at the intersection of Western and Asian baking styles in terms of sweetness, lightness, and texture. Since our cakes are “light” in sugar and in texture, it is more refined and allows for intricate and delicate flavors to naturally stand out such as our signature whipped mascarpone cream. Because our genoise cake sponge is light and airy, our whipped mascarpone cream makes it the perfect pairing and is personally preferred over buttercream in terms of taste and texture. At Sincerely Meraki we find buttercream to be too sweet and dense for our palate, but it makes for the perfect decorating medium, so we only use our Vanilla Sweet Cream Swiss meringue buttercream to decorate the outside of our cakes.
Our design and aesthetic influences are rooted from the Japanese aesthetic of shibui and shizen — minimal, organic influence, with modern elegance using neutrals, pastels, and earth tone colors. We pride ourselves in our ability to create beautifully designed cakes that are signature works of art — we absolutely do not copy or replicate any cake designs from other shops as we do not accept stealing or taking credit for other people’s creative artworks. Instead, our designs are influenced and inspired from nature, architecture, pottery, jewelry, textures, daily life etc. Similary to the Japanese culture of shokunin meaning the 'mastery of ones profession', Sincerely Meraki cakes represent the years of mastering our craft as a buttercream cake designer—mastering the art of buttercream. We strive to for pristine and flawless cakes — paying attention to the finest details often overlooked by many and finishing off with straight edges and clean lines. We hope that our cakes are suitable for any of your event, big or small, formal or casual.
Our Values
Ingredients: We do not use any artificial flavorings or preservatives. We prefer to use fresh, high quality ingredients (local if possible), and let their natural flavors stand out on their own. This allows us to produce high quality, tasty cakes.
*** The only artificial flavoring we use is vanilla — there is a reason we do not use real vanilla. Vanilla has a long history of issues pertaining to its ethical and sustainable practices. We do not agree with the working conditions and environmental issues this spice holds, so we choose to omit the spice all together and opt for the artificial flavoring of it instead.
Sustainability: We care deeply about the effects a business (small or big) can have on the environment and are constantly researching and seeking out better techniques, practices, ingredients, tools, sourcers, etc. that are able to make us more sustainable not only with our relation to the environment but also within our business operations. For starters, our packaging is all 100% recyclable and/or compostable, and we purchase smaller bulk items so we don’t physically over exert our bodies — we only hope to better improve our sustainability efforts from here on out.
Ethicality: Having experienced the food industry’s harsh work environments, toxic culture, racial and gender inequality, and the exploitation of workers first hand, Liz no longer wanted to be a part of that culture nor did she want to create a business that endorsed that culture. She wanted to be able to do what she loved—working with food, while being in an ethical and sustainable work environment. We value our employees and want to be a business that can provide sustainable pay for our employees, provide basic benefits such as health care, as well as foster a comfortable work environment where employees of any race/gender/personality can thrive, feel valued, and accepted for who they are.
Hospitality: We do our very best to make sure our clients are heard, appreciated, cared for, and be treated with respect. We are grateful to all of our clients and value constructive feedback because with that information, we can only get better and improve as a business.
